I love Italian food, however I try to avoid eating too much pasta. You know the white pasta full of gluten that has absolutely no nutritional value but taste delicious. I’ve heard of people trying raw zucchini shredded and using that as “pasta”. I’ve been dying for pasta so I thought what the heck I’ll give this a try.

Once I found this recipe with avocado pesto I knew this must be good. Plus adding chickpeas and sun-dried tomatoes to the mix, sounded pretty good to me.

There is plenty of protein in this  completely vegan and raw 15-minute meal. So eat your pasta and stay healthy too.
