Yesterday I bought fresh zucchini noodles from my local organic market. I have been eating gluten free for the past 3 days now. I feel wonderful, I have lots of energy and I do not feel bloated!

So instead of sticky pasta (that yes it’s so good yet sooo.. bad pasta) I’ll be making a new twist on spaghetti I have never had before using zucchini noodles. Not only will they taste yummy (so I’ve heard) but they are way better for you.

In my search for a zucchini noodle spaghetti recipe I found this recipe Zucchini Noodles with Asparagus, Corn & Mango Sriracha Dressing. I thought heck with the spaghetti I want to make this now!

Since I already purchased zucchini noodles this meal will be super fast to prepare. Next time (if I like them) I can shredded my own noodles.
