As you may already know kale is very high in essential vitamins and nutrients. It’s packed with vitamin A and K, iron, magnesium and calcium. You could eat this salad as a main meal with some yummy sides.
During the winter I normally do not like salads and prefer cooked vegetables. However when you add dried fruit and nuts to a salad it totally changes everything.
I like the idea of adding dried cranberries to this salad. It gives the salad a nice sweet flavor while the cashews add a crunch.
