I almost called this salad the Rainbow Bright Salad because it’s so colorful and pretty. But I think I’ll stick with Watermelon Radish Mango Quinoa Salad.

This is one of my favorite Whole Foods salad bar creations. Yes, I made this at Whole Foods one day for lunch. It’s super easy to make at home too.

Here’s how you make this yummy salad…

Pick your base – spinach, spring mix or kale. I used spinach in this one.

Next – Add all your toppings: quinoa, mango, slices of watermelon radishes, shredded carrots, green peas, coconut flakes, dried cranberries, edamame, red bell peppers.

For dressing – I simply add olive oil and balsamic vinegar, sea salt and black pepper. Toss together and enjoy!
