I would say this is my go-to type of meal every week. A burrito without the shell. Or sometimes called a rice or burrito bowl. The toppings you can add to your burrito bowl is endless. I would definitely use a vegan cheddar cheese in this recipe. Plus add a homemade guacamole and chopped cilantro. Ok… and maybe chopped purple onions and shredded lettuce.
