Stuffed peppers have always been a favorite of mine. You can stuff any kind of pepper with vegan cream cheese, fresh herbs and even diced up veggies. They are just delicious.
To make these vegan-style use vegan cream cheese such as Tofutti Better Than Cream Cheese. It’s creamy and completely dairy free. Plus they offer a herbs & chives flavor which would be perfect for this recipe. For cheese I would use Daiya Pepperjack Style Shreds. It melts perfectly and taste delicious.
