Mac n cheese is one of those creamy and warm comfort foods I crave when it’s cold outside or sick at home. I found this awesome vegan recipe for Vegan Green Chili Mac n Cheese and can not wait to give it a try.

Back in the day I used to eat that horribly-bad-for-you boxed mac n cheese. Fast forward to now I’m so glad I have changed my diet to not include any processed foods like that.

In this recipe you will be making homemade mac n cheese, no processed dairy products and junk here.

To make the velvety cheese sauce you use raw cashews which will need to soak for 4-6 hours or overnight.

Plan ahead with this recipe.  Once you are ready to make this dish it really only takes 30 minutes.
