Every Saturday morning at my local farmer’s market there is a sweet French lady, Irene, that whips up the best crepes I’ve ever had. I asked her what she uses to make them. She told me she uses buckwheat flour.
In an effort to try and re-create these delicious pancake-like treats I searched the web for a vegan crepe recipe using buckwheat flour. I found this super simple recipe from Simple Vegan Blog. They even look just like the crepes Irene makes. Time to give them a try and no longer wait till Saturday to have some crepes.
