Creamy Thai Dressing

Ingredients:
3/4 cup sesame oil
1/2 cup nama shoyu
1/4 cup olive oil
1/4 cup lime juice
1 tbsp maple syrup
4 thai bird chiles or 3 tsp red chili flakes
1 tsp sea salt
1/4 cup chopped cashews

Steps:
Blend all ingredients in a blender until smooth

 

Salad

Ingredients:
2 cups mixed greens
1/2 cup pineapple, finely diced
1/2 up sun-dried tomatoes, soaked and finely sliced
1 avocado, sliced
Sea salt
Freshly ground black pepper
1/2 red bell pepper, cut into long, thin strips
1/2 cup young coconut meat, thinly sliced
1/2 cup curried cashews, chopped
1/2 cup creamy Thai dressing
Cilantro leaves, for garnish

Steps:
1. Place a handful of mixed greens in the center of each plate. Top with pineapple, sun-dried tomatoes, and avocado.
2. Season with salt and pepper to taste. Top with red bell pepper, coconut, and curried cashews.
3. Drizzle dressing generously over top just before serving. Garnish with cilantro leaves.
