Have you ever had a kale salad that just wasn’t right, the texture was hard or it just tasted bitter? I’ve been there, I even stopped eating kale salads for a while … until now.
I found the secret to a great kale salad. And it’s simple. (I’ve actually heard of it before but never tried it)!
The secret is you have to massage the kale. You have to give it a little bit of lovin’. When I thought about it I was like this awesome because you are actually adding a little bit of your own positive energy and love into the food you are about to eat.
So here’s what you do…
1. In a large bowl add about 2 cups of kale (remove all the stems and hard pieces – these parts of the kale are hard to digest… so get rid of them).
2. Drizzle about 1 tbsp of olive oil/flax oil/coconut oil (whatever your preference), squeeze half of a fresh lemon, add a dash of sea salt, black pepper and red pepper (just a little to give the salad a little kick).
3. Now with your hands (YES, your hands— they will get dirty — you will need to wash them — it’s not the end of the world — and a spoon just WILL NOT do the trick). Massage and toss the kale until all the oil and lemon juice and spices are generously spread all over. It’s really fun doing this, make you feel like a kid again, because you get to play with your food. And TRUST ME your kale salad will taste amazing because your “dressing” is all over.

Use this kale salad as your base and add your favorite toppings. You can add diced bell peppers, chunks of avocado, slices of cucumber, cranberries, raisins, sunflower seeds. The options are endless. Have fun with it!
I added a trail mix called Sunny Cranberry that I bought at Target. It’s a combination of golden raisins, cranberries, salted sunflower seeds, pepitas and almonds. I tossed a handful or two on my kale salad.
