Roasted vegetable dishes are my favorite during the winter months. Especially a bunch of bite size root vegetables roasted to perfection with just a little EVOO, sea salt and black pepper.

This recipe is so easy to make with only five main ingredients. Winter squash, carrots, sweet potatoes, purple potatoes, and cherry tomatoes all tossed with a little olive oil and spices. You can whip this up in 25-35 minutes.
