I’d never really heard of celery root until I found this recipe. I discovered it’s exactly what it’s named after… celery root or sometimes called turnip root. This vegetable has a mild, celery-like flavor with a starchy, rather potato-like texture.
After 45 minutes of roasting celery root, carrots and fresh thyme you will have a delicious side dish to add to any dinner.
I’m a huge fan of roasting vegetables especially in autumn and winter months. For me raw vegetables just do not cut it for me at that time. I would prefer something warm and fully cooked.
