If you are not familiar with carbonara pasta it’s a classic Italian dish that was created in the mid-20th century. It’s a pasta dish made with eggs, cheese, bacon or pancetta, and spaghetti noodles. Otherwise a very creamy and filling dish.

I stumbled upon this vegan version that uses shiitake mushrooms as bacon (genius idea) and a yummy creamy sauce you can make in no time.

In this recipe they use rice linguine which makes this recipe also gluten free. Double bonus!

I’d like to add sun-dried tomatoes and green peas when I cook this pasta dish.
