Chia pudding is one of my new favorite meals. Perfect for breakfast, lunch, afternoon snack or dessert. Basically you can eat it any time of the day.
It’s super easy to make and you can add any toppings you like. I typically make it at night so I can enjoy it on the go the next day.
- 1/4 cup chia seeds
- 1 cup almond milk (unsweetened)
- 1/4 tsp vanilla extract
- fresh fruit (in this picture I added mango, blueberries and looks like a few raspberries too)
- In a medium bowl mix together chia seeds, almond milk and vanilla extract. Let sit overnight in the refrigerator. Or at least 1-2 hours.
- Top with your choice of fresh fruit. You could even add a drizzle of maple syrup and coconut flakes. Enjoy!
