  • 33 calories
  • 9% of the daily value of calcium
  • 206% of vitamin A
  • 134% of vitamin C
  • 684% of vitamin K     
  • Good source of copper, potassium, iron, manganese, and phosphorus.

I found a refreshing salad that adds root vegetables to what would just be a normal kale salad. In this recipe you use shredded kale, carrots, whole pecans, grated turnips and grated rutabaga.

All tossed together with a tangy lemon dressing. The dressing is super easy to make. It’s just lemon zest, olive oil, lemon juice, soy sauce and agave nectar.
