The other day I was preparing my lunch for work. I thought I’d just bring a bowl of brown rice and black beans. Then my creative mind kicked in and I came up with the kale and carrot rice bowl. It’s super easy to make and put together. And I loved it for lunch.
So here’s how to make it.
And you can definitely double or triple this recipe to make more.
1 cup cooked brown rice
1/2 cup cooked black beans
3 baby carrots, chopped
1/2 cup fresh kale, chopped
3 tbsp avocado
1/4 cup scallions, chopped
1 tbsp red onion, chopped
1 tsp flax oil
1/2 lime, freshly squeezed
Sea salt & black pepper, to taste
1. I layered my bowl starting with rice, and then continue with each of the following items: black beans, carrots, kale, avocado, scallions, red onion, flax oil, sea salt, black pepper and lime juice.
2. Also you can top this rice bowl with your favorite salsa or hot sauce. It can be eaten right away or re-heat later.
Tip: Make it for lunch by planning ahead and preparing a bowl the night before.
