I recently bought pre-made zucchini noodles as a local organic market. I thought well I could make these myself because I want to eat them like everyday. Yes, they are delicious.
So once I purchased my own noodle slicer/machine I started making awesome zucchini noodles at home. Even my husband liked them!
Here is a super simple recipe you can use with your homemade zucchini noodles.
1. Boil noodles for about 2-3 minutes. Drain and rinse.
2. Lightly toss noodles with 1-2 tbsp of EVOO, sea salt, black pepper, 1 tsp minced garlic, pinch of oregano thyme & rosemary, garnish with fresh chopped parsley. Serve and enjoy.
It’s really that simple.
Otherwise you can make your own vegan red sauce. In the picture above I made a red sauce with fresh tomatoes, chickpeas, garlic, carrots, broccoli, onions, mushrooms and all kinds of yummy Italian seasonings.
