For this salad I use spring mix greens with kale if I have, shredded carrots, thinly sliced cucumbers, alfalfa sprouts, peanuts, raisins, dried cranberries/cherries, sunflower seeds and pistachios.

For dressing I use a pinch of sea salt, freshly cracked black pepper, ground red pepper, EVOO and balsamic vinegar. I put it right on the salad.

I love this salad because the nuts give it a crunch and the dried fruits add a nice sweetness. It’s filling and good!
