Risotto is one of my favorite dishes to not only eat but make. Sure it takes some time to make but it’s all worth it in the end. I found this spring pea risotto that is not only vegan but very quick to make.

So did you know peas are high in fiber and a great source of vegan protein. Ya, and the health benefits go on.
