If you want to try something new in place of rice I highly recommend trying cauliflower rice. It’s a great low-carb and grain-free dish.  And the awesome part is there is no rice involved. It’s simply cauliflower finely chopped up.

Once sautéed in a pan with a little bit of EVOO, sea salt and black pepper you have your rice dish. I use it all the time in place of rice. I find it is a great way to get an extra serving of veggies in my day plus I do not feel bloated after.

There are a few ways to make cauliflower rice. I have tried finely chopping it to the perfect texture. I must say this does get old fast, it’s not quick and your hand will probably hurt shortly after. Another way you can do it is with a cheese grater.  Grate the cauliflower to a coarse texture, similar to the look of rice.

Or the quickest way I have found is chopping the cauliflower head into 4-6 big pieces and placing them in a food processor and pulsing a few times until you get that rice-like texture.


1 head of cauliflower

1 tbsp EVOO

sea salt and black pepper (to taste)


1. Pick what type of method you will use to make your cauliflower into a rice-like texture. I highly recommend using a food processor because it’s faster. (You can find cauliflower rice in some stores already made for you).

2. Once you have the right texture simply add all cauliflower rice into a medium skillet with 1 tbsp of EVOO. Cook over medium heat for 5-7 minutes. You want the cauliflower to be soft but firm. (just like rice-not mushy).

3. Add sea salt and black pepper for seasoning. You can add garlic too if you want and many other spices to make this the perfect side dish for your meal. Enjoy!
