Even though Halloween is over this will still be the perfect soup for fall and winter. It’s made with butternut squash and coconut milk plus other yummy plant-based ingredients.
I made homemade pumpkin soup for the first time last week and it was delicious. Since then I’ve been crazy to try a butternut squash soup. I found this recipe over at Health Inspirations. The pumpkin seed granola topping is such a great idea. I’m looking forward to giving this one a try.
