For 30 days I was avoiding all carbs. I was used to eating avocado toast using ezekiel bread for breakfast. But during these 30 days I gave that up. It was hard but worth it in the end.

In an effort to recreate my favorite avocado toast I made these Avocado Lettuce Wraps. I used butter lettuce, sea salt, fresh lemon juice and cayenne pepper.

These avocado lettuce wraps are perfect if you want a small meal that’s satisfying, fills you up but does not leave you feeling heavy after. I absolutely love these for breakfast or anytime of the day.

Ingredients:

1 hass avocado

4-6 butter lettuce cups

1/2 lemon

sea salt

cayenne pepper

Steps: 

  1. Rinse lettuce and let dry. Mean while cut open the avocado, remove seed and make slices in each side of the avocado.
  2. Spoon desired amount of avocado into each lettuce cups, squeeze fresh lemon all over, add a pinch of sea salt and dash of cayenne pepper. Roll up and enjoy!

*You can also add shredded carrots, cucumbers and sliced bell peppers to the wraps.
