For lunch or dinner I love making this salad. It leaves you filling full yet satisfied for hours. The combination of nuts, dried fruit and avocado is so delicious.

Here’s how to make this yummy Avocado Kale Salad.


1 cup chopped kale

1 cup chopped romaine lettuce

2 baby carrots, chopped

1/4 cup chopped onion

1/4 cup cucumber, chopped

handful roasted pistachio

handful sunflower seeds

handful dried fruit pieces (cranberries, raisins, cherries)

1/2 avocado, cut in bite size pieces

To Make the Dressing:

For the dressing combine: 2 tbsp EVOO, pinch of sea salt, freshly ground black pepper, 1/2 tbsp balsamic vinegar, and dash of red pepper. Mix well.

Time to build your salad. Starting with the lettuce and kale at the bottom, then add onions, carrots, cucumbers, nuts and fruit pieces, and avocado. Drizzle the homemade dressing all over and enjoy your salad!

Sometimes I like enjoy a small bowl of brown basmati rice on the side or you can mix it into the salad. Either way this salad is a favorite all the time.
